Ingredients:
  • 2 tablespoons of light cooking oil

  • 1-2 green chilies, finely chopped
  • 1 large-sized onion, finely chopped
  • 1/2 teaspoon of red chili powder
  • 1/4 teaspoon of turmeric powder
  • 1 teaspoon of coriander powder
  • 1 medium-sized tomato, finely chopped
  • Salt to taste
  • 2 cups of split pea lentils, cooked until tender yet holding their shape
  • Water, as needed
  • A handful of fresh cilantro leaves, finely chopped for garnish
  • A squeeze of fresh lemon juice for garnish

Instructions:

  • Heat oil in a spacious, sturdy pan and sauté cumin seeds, fennel seeds, ginger, garlic, green chilies, and onions until they turn golden and fragrant.
  • Add the spices and sauté briefly.
  • Mix in the chopped tomatoes, season with salt, and cook until well blended for a few minutes.
  • Add the cooked lentils and water, adjusting for your desired consistency. Allow it to simmer, covered, over low heat for 5-6 minutes to let the flavors meld.
  • Garnish with freshly chopped cilantro leaves and a drizzle of fresh lemon juice. Serve it piping hot.
